Each variety of our infused honeys are created in small batches and take between one and three months to complete. The time of infusions varies due to the type of herb, weather, moon cycle in which the herb was harvested and honey content. We test each infusion often to monitor the flavor—sometimes doing a double, or even triple infusion to achieve the desired result.
