Our Lemon/Ginger/Garlic Infused Honey begins during garlic scape season. The first fresh greens are coming in from the garden and the garlic (Allium sativum) is unfurling to the sky. This immature flower has a beautifully mild garlic taste that is the foundation of our infusion. Of course, we have to buy the organic lemons (Citrus x limon) and ginger (Zingiber officinale), but they are freshly chopped and zested into the mix at the same time as the garlic. Over a period of one to three months this honey will be exposed to the warmth of the sun and the energy of the moon as it waxes and wanes across the sky. Toward the end of this time period it is tasted almost daily to find the point at which the flavor and phytochemical benefit has married perfectly with the complexity of our honey
The idea with this infusion was to create a delicious cold and flu tonic. Originally I started with just lemon and garlic, but when I tasted it there was something missing. I decided to try adding ginger because I wouldn’t go into cold and flu season without it. It was a perfect fit! Not only does this work by the spoonful or added to hot water when you’re not feeling well, but it lends itself easily to a lot of recipes.
When this honey moves across your tongue, you will get the flavor of lemon up front, garlic in the back and the ginger marries the two for a complete taste! This is one of our most popular blends. I think when people taste it, they can instantly imagine themselves using it on a stir fry, on fish, chicken or cheese. I’ve even heard back from customers who use this as part of salad dressing with vinegar and oil! Enjoy it in good health!

At Mockingbird Meadows, we focus on the health of our bees over our bottom line. We do not use any chemicals in our hives or our property. We save back a large portion of our harvest every year to ensure the bees are fed only their own honey rather than high fructose corn syrup or sugar water. We harvest completely by hand and disrupt the natural rhythm of the lives of our bees as little as possible. Our bees are happy and healthy and this leaves them free to fly farther and look harder for the most nutritive pollen and nectar for the raw (never, ever heated!) products we deliver to you. My husband had a cold with a very sore throat. This honey helped his throat SO much. He enjoyed several spoonfuls with tea or hot water. I will definitely order again.
